Slow Cooker Moroccan Chicken Tagine

THIS is my photo. :( I’m trying to get better at this! Unfortunately, many times there is either no sunlight when dinner is made or I have to fight with hungry people to “wait ONE more minute while I take 20 photos of this food!”.

Here is one such hungry person. Love you Dominic!

The ingredients list for this is pretty lengthy but worth it. All the spices and fresh flavors are a winner and not to mention full of health benefits. This dinner is low in fat and HIGH in nutritional value! You can even add golden raisin to this to add even more sweet notes. Enjoy!!


4-5 skinless boneless chicken breasts, cleaned (wash, pat dry, remove any silverskin)

2 cups chicken broth

1 (15oz) can petite diced tomatoes

1 large onion – chopped

1 cup apricots – chopped

4 cloveso f FRESH garlic – minced

2 tsp ground cumin

1 tsp ground cinnimon

1 tsp ground ginger OR freshly grated

1/2 tsp ground coriander

1/2 tsp red pepper flakes


1 TBS water

1 TBS cornstarch

1 can garbanzo beans

1/4 cup slivered, sliced or chopped almonds, toasted

Hot couscous or rice


Place chicken in crockpot. cover with the next 10 ingredients. Cook on LOW for 5 hours.

Combine the cornstarch and water. Mix until smooth. Stir into crock pot. Add beans and 1/2 the chopped cilantro. Cover and cook on HIGH for 15 min until sauce is thickened. Serve topped with toasted almonds and chopped cilantro. (Over couscous or rice if prefered)
