Once again…butter?? I thought this was healthy!!
I think it’s so funny that we are so trained by weightloss companies to think that butter is going to make you fat. That it has become the McDonald’s of grocery items. (If you’ve watched Jim Gaffigan you know what I’m talking about here! “WHAT? YOU eat at McDonalds?! That’s DISGUSTING! ….4pm the next day…wow I’m really hungry? Want to go to McDonalds? lol) Here is another lesson in balance. We all need a little butter sometimes – it’s HOW you use it that makes it unhealthy. Does a recipe call for a stick of butter? (Think: cream sauce or cookies) Not going to be healthy. BUT Swiping butter lightly in a pan to sear sliced pears or apples? Absolutely DELISH. And you get all that buttery flavor with very little fat!
This recipe is high in protein and “good” carbohydrates. This is a great thing to eat in the morning when you need energy for anything endurance related.
The only thing that could make this even better is maybe some bacon… did I say that?

** Tip: If you are trying to lower your cholesterol or lose weight, I recommend using egg whites only. *
1/2 Whole Wheat English Muffin
1/2 Apple Sliced into thin rounds
ALL-Natural Peanut butter/Almond butter (no added sugar!)
1 stick of unsalted, ALL NATURAL butter (you can even try GHEE)
Cooking Spray (optional)
Take the stick of butter and peel just enough of the wrapping off to uncover about 1 inch of butter.
In a pan on Medium- high heat – swipe the butter stick in the pan.
Add the english muffin face down and cook until warm and browned. Transfer to plate.
Swipe the pan with butter one more time.
Immediately add the apples and let them brown slightly. Turn the heat down as needed. (While this is cooking, spread a little nut butter of your choice on the english muffin) Sprinkle with pepper and flip! Cook until softened and aromatic. Transfer to plate.
Now, if you have cooking spray, this is a good time to use it. If you don’t and you are using a non-stick pan you might be able to cook the egg without adding anything. Add the egg. Cook on medium for 3 min. Sprinkle with a dash of salt and pepper and flip. Cook as preferred, and put on top of your english muffin. Top with the cooked apples and put any extra on the side. ENJOY!!
